broad bean dip

Broad bean and mint dip
Recipe type: Dip, Snack
 
Ingredients
  • 1 small tin of broad beans
  • 2 tsp mint
  • ½ lemon
  • 2 tbsps of Greek yoghurt
  • salt and pepper
  • 2 handfuls of spinach
Instructions
  1. In a jug place a small tin of broad beans, you can also you frozen or fresh which have been cooked. Add 2 tsp mint, juice ½ lemon, 2 tbsps of Greek yoghurt, salt and pepper
  2. Add two handfuls of spinach
  3. Blend until smooth. This is great serves with sticks of raw veg eg cucumber, celery, pepper, mange tout
